Ingredients
Oat Soak
- 80 g rolled oats
- 230 ml water
Quick Starter
- 50 ml water
- 3 g fresh yeast(or 2 g dry yeast)
- 60 g bread flour
Main Dough
- 100 g whole wheat flour
- 150 g bread flour
- 8 g salt
Instructions
- 1Soak 80 g rolled oats in 230 ml water.
- 2Make the quick starter: mix 50 ml water with 3 g fresh yeast (or 2 g dry yeast), then add 60 g bread flour and mix until incorporated.
- 3Cover and let the starter rise for 1 hour.Timer Available:Starter Rise (1:00:00)
- 4Add the soaked oats to the starter and mix well.
- 5Add 100 g whole wheat flour, 150 g bread flour, and 8 g salt. Mix until no dry flour remains.
- 6Cover and let rest for 30 minutes.Timer Available:First Rest (30:00)
- 7With a wet hand, stretch all 4 sides to the center, then lift and slap the dough back.
- 8Cover and rest for 30 minutes.Timer Available:Second Rest (30:00)
- 9Repeat stretch-and-fold. The dough is now much more elastic and easy to handle.
- 10Let rise until doubled in size, about 2 hours.Timer Available:Bulk Rise (2:00:00)
- 11Turn out the dough, fold it to make it easier to cut, and divide into 3 equal parts.
- 12Pre-shape each piece into a tight ball. Let rest uncovered for 10 minutes.Timer Available:Bench Rest (10:00)
- 13Final shape each piece: flatten gently, roll and press down with your fingertips, then seal the edge by pinching. Place on a baking tray.
- 14Cover with a towel and let rise for 30 minutes.Timer Available:Final Proof (30:00)
- 15Dust lightly with flour, score with a sharp blade, sprinkle a few drops of water, cover with another tray, and bake at 220°C for 20 minutes.Timer Available:Covered Bake (20:00)
- 16Remove the top tray and bake 10 more minutes until golden and as crispy as it gets.Timer Available:Final Bake (10:00)
