    Italian Bread with Semolina

    This is probably the easiest bread I've ever made! Thin, crisp crust with soft and airy inside that tastes heavenly. The combination of bread flour and semolina adds incredible flavor and beautiful color to these beautiful loaves.

    Italian Bread with Semolina

    Ingredients

    • 240 ml water
    • 3 g fresh yeast(or 2 g dry yeast)
    • 200 g bread flour
    • 100 g semolina
    • 6 g salt

    Instructions

      Mix 240 ml water with 3 g fresh yeast (or 2 g dry yeast) until dissolved.

      Add 200 g bread flour, 100 g semolina, and 6 g salt. Mix until no dry flour remains—just mix, no kneading needed. This dough is softer than usual—that's the right consistency!

      Cover and let rest for 30 minutes.

      With a wet hand, stretch all 4 sides to the center, then lift and slap the dough back. This only takes about 15 seconds.

      Repeat stretch-and-fold. The dough is now much more elastic and smooth.

      Let rise until doubled in size, about 2 hours.

      Gently spread the dough a little and fold in half very gently to aim for a rectangular shape. The dough is very airy!

      Divide into 6 equal pieces. Then divide each piece in half if you want smaller pieces. Give them a quick, gentle shape and space them out so they won't stick.

      Cover with a towel and let rise for 20 minutes.

      Sprinkle a few drops of water around them for steam, cover with another tray, and bake at 220°C for 15 minutes.
