Soft & Therapeutic Ingredients
- ⅔ cup Water(160 ml)
- 1 tsp. Fresh yeast(3 g), or ½ tsp. (2 g) dry yeast
- ¼ cup Plain yogurt(60 g - the secret to incredible softness)
- 1 tsp. Vegetable oil
- 2 ½ cups Bread flour(320 g)
- 1 tsp. Salt(6 g)
Therapeutic Bread Making Method
- 1Create the liquid base: Mix water with fresh yeast (or dry yeast) until dissolved. Add plain yogurt and vegetable oil. The yogurt is the secret ingredient that makes the inside incredibly soft.
- 2Add dry ingredients: Add bread flour and salt to the mixture. Mix until there's no more dry flour - just mix, no need to knead!
- 3First therapeutic rest: Cover and let rest for 30 minutes.Timer Available:First Rest (30:00)
- 4Stretch and fold: With a wet hand, stretch the 4 sides of the dough and fold to the center.
- 5'Lift and slap' technique: Lift the dough and slap it back. I call this technique 'lift and slap' - it's both effective and satisfying.

- 7Repeat the process: Repeat the steps from before - stretch and fold the 4 sides, then lift and slap. Feel the dough becoming more elastic and pleasant to work with.
- 8Main rise: Let rise until it doubles in size - it could take up to 2 hours.Timer Available:Main Rise (2:00:00)
- 9Prepare for shaping: Sprinkle flour on work surface. Fold the dough so it's easier to cut. Divide into 6 equal parts.
- 10First shaping: For each piece: pat down slightly and roll each piece. Fold to make into a ball. Rub against work surface to seal.
- 11Shape rest: Let the balls rest for 10 minutes uncovered.Timer Available:Shape Rest (10:00)
- 12Final shaping: Gently flatten each ball, just a quick fold to tighten the surface, then seal again. Transfer to baking tray.
- 13Final proof: Cover with a towel and let rise for 30 minutes.Timer Available:Final Proof (30:00)
- 14Prepare for baking: Preheat oven to 450°F (230°C). Sprinkle a thin veil of flour on top, then smooth the flour with your hand. They're incredibly pleasant to touch! Score each roll with a sharp blade or knife.450°F (230°C)
- 15Create steam environment: Sprinkle a little water between the breads (not directly on them). Cover with another pan of the same size for perfect steam.
